Ingredients
- Beef rump or topside – 1.5kg
- Seeded mustard – 1.5 tablespoons
- Dijon mustard – 1.5 tablespoons
- Olive Oil
- Sea salt
- Cracked pepper
- Thyme (fresh or dried) – 1 teaspoon
- Gravy – 300mls
- Horseradish (optional) – 1 teaspoon
Method
- Seal in a non-stick pan until all sides of the beef are golden brown
- Mix both mustards, thyme, salt & pepper and completely cover all sides of the beef
- Cook in a pre-heated oven at 130 degrees for 2.5 hours
- Once cooked place foil over the beef loosely. Make sure the meat is rested for 25 minutes
- Place meat into warmed bread roll and top with gravy
- Serve and enjoy!
