The Percy Beames Roll is a classic Reserve favourite for members – and now you can get the taste in your home.

Ingredients

  • Beef rump or topside – 1.5kg

  • Seeded mustard – 1.5 tablespoons

  • Dijon mustard – 1.5 tablespoons

  • Olive Oil

  • Sea salt

  • Cracked pepper

  • Thyme (fresh or dried) – 1 teaspoon

  • Gravy – 300mls

  • Horseradish (optional) – 1 teaspoon


Method

  1. Seal in a non-stick pan until all sides of the beef are golden brown

  2. Mix both mustards, thyme, salt & pepper and completely cover all sides of the beef

  3. Cook in a pre-heated oven at 130 degrees for 2.5 hours

  4. Once cooked place foil over the beef loosely. Make sure the meat is rested for 25 minutes

  5. Place meat into warmed bread roll and top with gravy

  6. Serve and enjoy!
